Chapel Porth Hedgehog Ice Cream Recipe

How can you bring some of the Chapel Porth magic home with you?

1). Add scoops of creamy Cornish ice cream to a traditional English wafer cone.

2). Layer on a generous helping of glorious Cornish clotted cream.

3). Carefully roll in honey-roasted hazelnuts (or liberally sprinkle on if you’re worried about the scoops toppling over). To roast your own hazelnuts:

  • Spread chopped hazelnuts across a baking tray lined with baking paper.
  • Melt a knob of butter with 2 tablespoons of clear honey.
  • Pour the mixture over the nuts and cook for 10 minutes in an oven heated to 170°C – shake the tray halfway through. Sprinkle with a pinch of salt and leave to cool before eating.
